Green Vegetable Stir-fry with Garlic and Chilli

Vegetarian Serves 4

When we do our weekend shopping, we are overly ambitious about what we will eat, so normally on a Wednesday or Thursday evening we go vegetarian and throw together a big stir-fry.

1 head of broccoli

110g/4oz/3/4 cup green beans

110g/4oz/3/4 cup mangetout

2 small shallots, peeled

1 red chilli, deseeded if you wish

2 garlic cloves, peeled

sunflower oil, for frying

75g/3oz/1/2 cup whole cashew nuts

100ml/31/2 fl oz/scant 1/2 cup soy sauce

50ml/2fl oz/1/4 cup medium sherry

salt and freshly ground black pepper
